Semillon

the sketch

The second of our sketches tells the story of flight and shows the different stages of wing movement during flight. This represents our journey of the first flight (winemaking) on our own and how much hard work and movement needs to be done in order to lift off and stay in the air. 

The art was done by Malvin Wright and the wine by Christo Kotze. In true artistic fashion Malvin's art is signed off by a signature, whilst the wine was signed off by Christo's wine lees thumb print.

The name represents the wine being the second wine that was made but the first that went to bottle.

the wine

The idea behind the wine is to showcase a style of non-invasive winemaking and site expression. The grapes were harvested and stored overnight in a cold room to ensure that the grapes had sufficient time too cool down before processing the next day. The juice was then pressed off and allowed to settle for 36 hours before being racked to two 500L oak barrels. The juice was then left to slowly acclimatise to atmospheric temperature whereafter spontaneous fermentation ocurred. After the completion of  alcoholic fermentation the wine was left on gross lees for 8 months with minimal stirring of the lees. The wine was stabilised and filtered before bottling.

The wine shows hints of lemon and white floral notes, with a pallet full of texture and underlying hints of honey and creaminess.
