Syrah
the sketch
The first of our sketches tells the story of the jump and shows the first jump out of the nest. This represents our first attempt of winemaking on our own journey and the courage needed to attempt this feat. It also shows that we sometimes need good friends to back us and push us to achieve good things.
The art was done by Malvin Wright and the wine by Christo Kotze. In true artistic fashion Malvin's art is signed off by a signature, whilst the wine was signed off by Christo's wine lees thumb print.
The name represents the wine being the first wine that was made but the second that went to bottle

Notes
The wine
The idea behind this wine is to showcase the balance between lush fruit and stronger grippy tannins from a cool climate growing area. The grapes were harvested and stored overnight in a cold room to ensure that grapes had sufficient time to cool down before processing the next day. Half of the batch was destemmed and placed in a fermenter where the fermentation could take placed via a submerged cap, whilst the other half of the batch was partially destemmed with whole cluster bunches (20%) for fermentation. Both batches were allowed to slowly acclimatise to atmospheric temperatures whereafter spontaneous fermentation occurred. After the completion of alcoholic fermentation the wines were softly pressed from the skins to 225L barrels. The wine was matured for 14 months in barrel whereafter the wine was blended and filtered prior to bottling.
The wine shows hints of dark plums and spice, with a lush full fruit palate and underlying hints of aniseed and grippy tannins .
